HELM existed long before it had a name. Its story began decades ago in family-owned restaurant kitchens. Founder and private chef, Brian Arruda, got his start washing dishes; but, after culinary school he quickly fortified his world-class executive chef pedigree while working for global hospitality luminaries.
It was under the mentorship of legends like Thomas Keller, José Andrés, and Daniel Boulud, that Brian honed the technical mastery of his craft and developed a deep appreciation for elite hospitality. So when the pandemic cratered the industry he cherished—Brian remained poised, and then he evolved.
